There’s something truly special about a tart like this. Sweet, sticky caramelised onions, juicy pear, and that bold, creamy blue cheese… all sitting on golden, flaky puff pastry. It feels gourmet — but with your Thermomix®, it’s beautifully simple.

This is one of my absolute go-to recipes when I want to impress without the stress. It’s perfect for lunch, entertaining, or those moments when guests pop in and you want something that looks (and tastes!) like you’ve gone to a lot of effort… even if you haven’t 😉

🛒 Ingredients

  • 1 sheet puff pastry (ready rolled)
  • 2 large onions, sliced
  • 1 tbsp olive oil
  • 2 ripe pears, thinly sliced
  • 100g blue cheese (swap for feta or goats cheese if preferred)
  • 1tsp brown sugar (optional, for extra sweetness)
  • 1 tsp balsamic vinegar
  • Salt & pepper, to season
  • Fresh thyme (optional, but lovely!)
  • Chopped walnuts
  • Drizzle of honey
  • Rocket to garnish (optional

💡 Don’t rush the onions and let them cool – this is where the magic happens!
💡 Use ripe but firm pears so they hold their shape
💡 Less is more with blue cheese – let it complement, not overpower
💡 Make sure filling is not too wet!

  • Fridge: Store leftovers in an airtight container for up to 2 days
  • Reheat: Pop back into the oven to crisp up (avoid the microwave if you can)
  • Freeze: Best frozen before baking — assemble, freeze, then bake from frozen adding extra time

Equipment

  • TM5/TM6 or TM7
  • Baking paper
  • Baking Tray
  • Ruler

Ingredients

  • 2 large onions sliced
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1 tsp brown sugar optional, for extra sweetness
  • 1 tsp balsamic vinegar
  • 1 sheet butter puff pastry ready rolled
  • 2 ripe pears thinly sliced
  • 100 grams blue cheese
  • Salt & pepper to season
  • Fresh thyme optional, but lovely!
  • 3 tbsp walnuts chopped
  • Honey to drizzle
  • Rocket garnish

Instructions

  • Preheat oven to 200℃ (fan180℃)
  • Add onion and garlic to Thermomix Bowl and chop 5 secs/speed 5. Scrape down.
  • Add olive oil, balsamic and brown sugar. Cook 20 mins/120℃/speed 1. Cool.
  • Line a baking tray with baking paper. Lay puff pastry flat on the paper. Score a 2cm border around the edge. Prick the centre with a fork. Spread caramelised onions evenly in the centre. Top with sliced pear. Crumble blue cheese over the top. Sprinkle thyme, salt and pepper. Brush edges with egg.
  • Bake 25 – 30 mins until golden. puffed and crisp.
  • Drizzle with honey and and sprinkle on extra thyme and chopped walnuts. Finish with a scattering of rocket. Slice and serve.
