Meat Curry Powder

Meat Curry Powder

Have you ever come across “meat curry powder” in a recipe and wondered what it actually is?

Meat curry powder is a warm, aromatic spice blend commonly used in Malaysian, Singaporean and Indian-style meat dishes. It has a deeper, more savoury flavour than a standard curry powder and works particularly well with beef, lamb and chicken.

It is also one of the ingredients used in Roti John—a delicious Singaporean-style filled baguette. If you can’t find meat curry powder at your local supermarket or Asian grocer, this homemade version is quick, easy and made entirely from pantry spices.

How Much Should I Use?

As a general guide, use 1–2 tablespoons of meat curry powder for every 500 g of meat.

Start with the smaller amount if your recipe already contains fresh chilli or additional spices. You can always add more as the dish cooks.

How to Store It

Store your meat curry powder in an airtight jar in a cool, dark cupboard. For the best flavour, use it within six months.

Don’t forget to label the jar with the name and date—especially if your spice cupboard is anything like mine!

Ways to Use Meat Curry Powder

This versatile spice blend can be used in:

  • Roti John
  • Beef or lamb curries
  • Chicken curry
  • Curried mince
  • Meatballs
  • Sausage rolls
  • Marinades for grilled meat
  • Soups and stews that need a little extra warmth

This is a fragrant, warming blend rather than an extremely hot one. If your family enjoys more heat, simply increase the cayenne pepper or add fresh chilli to your finished dish.

Once you have made your own spice blends, it is difficult to go back to buying them. They are fresher, you know exactly what is in them, and you can adjust the flavour to suit your household.
