For me, scones bring back memories of Sunday afternoons at home, when a batch would appear on the table and everyone would gather quickly, knowing they were best eaten warm. I still remember the debate – jam first or cream first – and the laughter that came with it. Now, every time I make a batch in the Thermomix®, it feels like bringing a little piece of that tradition back to life.

Equipment

  • Thermomix TM5, TM6 or TM7

Ingredients

  • 400 grams Self Raising Flour
  • 50 grams Cold Butter Cubed
  • 30 grams Castor Sugar
  • 125 grams Full Cream Milk
  • 125 grams Thickened Cream
  • 1 Egg
  • Extra Milk for Brushing

Instructions

  • Pre – heat oven to 200℃ (fan force)
  • Put flour, butter and sugar into Thermomix Bowl and mix 5 secs/speed 4.
  • Add egg, milk and cream. Knead 20 secs.
  • Tip onto a lightly floured thermo mat (or work top) and shape to around 4cm tall. Don't over handle, lumpy is ok!
  • Roll lightly with a floured rolling pin to level the top but not flatten the dough!
  • Flour a 6cm circle cutter (or any size you like) and cut out – don't twist the cutter
  • Re-shape remaining dough, handling as little as possible and cut out more scones. Repeat untill alll dough is used.
  • Place on a lined baking tray, just touching each other.
  • Brush tops with a little milk – none on the sides!
  • Bake for approx 15 mins until tops are lightly brown.
  • Enjoy warm with your favourite topping!

Notes

Keys to success:
  • Keep everything cold
  • Handle the dough as little as possible.
  • Don’t brush the sides with milk.
