6cm Scones

Thermomix TM5, TM6 or TM7
Ingredients

Self Raising Flour

Instructions
Pre - heat oven to 200℃ (fan force)
Put flour, butter and sugar into Thermomix Bowl and
mix 5 secs/speed 4.
Add egg, milk and cream.
Knead 20 secs.
Tip onto a lightly floured thermo mat (or work top) and shape to around 4cm tall. Don't over handle, lumpy is ok!
Roll lightly with a floured rolling pin to level the top but not flatten the dough!
Flour a 6cm circle cutter (or any size you like) and cut out - don't twist the cutter
Re-shape remaining dough, handling as little as possible and cut out more scones. Repeat untill alll dough is used.
Place on a lined baking tray, just touching each other.
Brush tops with a little milk - none on the sides!
Bake for approx 15 mins until tops are lightly brown.
Enjoy warm with your favourite topping!
Notes
Keys to success:
Keep everything cold
Handle the dough as little as possible.
Don't brush the sides with milk.
