But if you’ve ever tried cooking them, you may have encountered a common problem—soggy noodles. The trick is to cook them just enough to soften while keeping their delicious texture intact.

This is a fabulous recipe, easy, light and tasty! Perfect for mid week. But first lets explore more on zucchini noodles – how to make and how to cook them.

How to Make Zucchini Noodles

Before we get into the cooking methods, let’s talk about making zucchini noodles. There are several tools you can use:

Equipment

Ingredients

  • 2 medium zucchini spiralised
  • 250 grams raw prawns peeled and veined
  • 2 cloves garlic
  • 1 small red chilli optional
  • 30 grams butter or 1 tbsp olive oil
  • 1 lemon – zest and juice
  • 80 grams White wine or chicken stock
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp oregano or Italian herbs
  • 30 grams grated parmesan
  • fresh Italian parsley, chopped for garnish
  • 2 lemon cheeks to serve

Instructions

  • Spiralise zucchini and set aside in a bowl lined with paper to absorb moisture.
  • Add garlic and chilli to Thermomix bowl and chop 3 secs/speed 7. Scrape down sides.
  • Add butter or olive oil to bowl and saute 3 mins/varoma/speed 1.
  • Add lemon zest and juice to taste, prawns, white wine or stock, salt, pepper and oregano. Cook 4 min/varoma/Reverse/speed soft. (prawns should have turned pink).
  • Add zucchini noodles to the bowl with the prawns and mix to combine with your spatula. Mix 1 mins/90℃/Reverse/speed soft (just to warm noodles – don't overcook!
  • Divide onto serving plates, sprinkle with parmesan and parsly. Add a cheek of lemon so guests can squeeze over and enjoy!

Notes

For extra flavour, add some cherry tomatoes in step 3 with a splash of cream for a richer sauce in step 4.
