A light and fresh dish featuring tender zucchini noodles tossed with juicy garlic lemon prawns. Quick, healthy, and packed with flavour—perfect for a simple yet delicious meal!
Spiralise zucchini and set aside in a bowl lined with paper to absorb moisture.
Add garlic and chilli to Thermomix bowl and chop 3 secs/speed 7. Scrape down sides.
Add butter or olive oil to bowl and saute 3 mins/varoma/speed 1.
Add lemon zest and juice to taste, prawns, white wine or stock, salt, pepper and oregano. Cook 4 min/varoma/Reverse/speed soft. (prawns should have turned pink).
Add zucchini noodles to the bowl with the prawns and mix to combine with your spatula. Mix 1 mins/90℃/Reverse/speed soft (just to warm noodles - don't overcook!
Divide onto serving plates, sprinkle with parmesan and parsly. Add a cheek of lemon so guests can squeeze over and enjoy!
Notes
For extra flavour, add some cherry tomatoes in step 3 with a splash of cream for a richer sauce in step 4.
