Lemon & Garlic Cream Sauce

I made fabulous and very special dish on Cookidoo the other night ‘Salmon en croute’. I felt it needed a creamy sharp sauce and after a bit of tweaking, this is what I came up with and its perfect!.

This Lemon & Garlic Cream Sauce is one of those magical recipes – it’s incredibly simple, yet full of rich, tangy, comforting flavour that elevates just about anything you pour it over. It is especially good with Salmon.

Lemon & Garlic Cream Sauce
This Garlic & Lemon Cream Sauce is one of those magical recipes – it’s incredibly simple, yet full of rich, tangy, comforting flavour that elevates just about anything you pour it over. Especially great with Salmon!

Ingredients
- 2 cloves garlic peeled
- 1 shallot peeled
- 30 grams butter
- 330 grams thickened cream
- 1 tsp chicken stock paste (or half a chicken stock cube)
- 2 tsp chopped Dill
- 2 tsp chopped chives
- zest and juice of half lemon
- 40 grams finely grated parmesan cheese
- salt & pepper to season
Instructions
- Add garlic, shallot and butter to Thermomix Bowl and chop 3 secs/speed 5. Scrape down sides of bowl.
- Saute 3 mins/100℃/speed 1 – MC – (Measuring Cup) off, simmering basket on lid.
- Add remaining ingredients (except parmesan) and cook 4 mins/90℃/speed 2 with MC off (use the simmering basket on top if splashing).
- Add parmesan and cook for a further 4 mins/90℃/speed 2 with MC off (use the simmering basket on top if splashing). Taste and check seasoning, adjust with lemon, salt and pepper. If you want a thicker sauce, cook for a few minutes more 2 mins/90℃/speed 2 with MC off (use the simmering basket on top if splashing).
Notes
Parmesan – Grate before you start 10 secs speed 9.
Herbs – chop before you start on turbo 30 secs,scrape down and repeat. Set aside.
I used this sauce last night with the Steamed Salmon, green beans asparagus, peas and new potatoes. It was a delicious light meal.
