A popular British snack that typically consists of an egg that is coated in sausage meat, breaded, and then deep-fried or baked until crispy. Delicious warm or cold with a dipping sauce and some pickles.
Using the egg boiler mode in the TM6, cook 6 eggs on medium soft. For the TM5 place 6 eggs in simmering basket and steam 11 min/Varoma/speed 1. When finished cool quickly in cold water and peel. Set aside.
Add onion, garlic, parsley and thyme to Thermomix Bowl. Chop 3 secs/speed 7. Scrape down
Remove sausage meat from casing and add to Thermomix Bowl with the mustard. Season well. Mix 10 secs/speed 8. Check to see if it has mixxed together well if not mix again 5 secs/speed 8.
Divide meat into 6 equal portions. lightly flour eggs. Place one portion of meat on some plastic wrap and flatten, using some baking paper on top of the meat to help. Place one lightly floured egg in the centre and gently pull up plastic wrap and form a ball. Repeat so that you have 6 eggs wrapped in meat.
Get your 'breading ingredients ready by placing flour in one bowl, lightly whisking 2 eggs in another bowl and placing the breadcrumbs in another bowl.
Heat oil in a deep-fryer or wok to 180℃. Fry eggs, turning occasionally, until breadcrumbs are golden and sausage meat is cooked through (6-7 minutes should do it). Be careful as hot oil will spit). Drain on kitchen paper.
Serve warm or cold with some pickles and a lemon mayo dipping sauce. Enjoy
