½cupvinegar (I like to use half rice rice wine vinegar/half apple cider)
¼tsp`chilli flakesoptional
4coriander seeds
4 black pepper corns
Instructions
Boil water in the Thermomix using the kettle function.
Chop onion in half and the then chop each half in half again. Finely slice and place in a bowl.
Pour boiled water over the onions and let sit for 1 minute and then strain.
In a jar, add the remaining ingredients and gently shake to combine. Add the onions and mix to combine and cover with the vinegar mix. Taste the vinegar to balance sweetness and acidity, (it will mallow after resting). Place in the Refrigerator.
Ready to eat in 30 mins but best served after a few hours, even better the following day!
