Transfer to a Thermomix® Baking Mat. Shape into a ball . Wrap loosley in mat and let rise until double in size - about 1 hour. If you don't have a Thermomix® Baking Mat, transfer to an oiled bowl, cover in plastic wrap and let rise until double in size.
Once the dough has doubled in size, punch down and cut into 10 pieces. Flatten each piece slightly and fill with 1 heaped tbsp cooked chopped bacon and I heaped tbsp grated cheese. Fold in the edges to form a ball and roll to create a smooth bread roll. Repeat with remaining pieces.
Lay each roll onto a lined baking tray, 1cm apart. Cover with a damp tea towel and let rest for 30 mins.
Pre-heat oven to 180℃
Slit the rolls with a lame or sharp knife. Brush with egg and sprinkle on the remaining cheese and bacon. Cook at 180℃ (fan), for 15 - 20 mins or until the cheese has melted and is golden.
Remove from the oven and brush with a little melted butter. Enjoy!
